    1 cup spaghetti squash
    1/2 cup crushed tomatoes, home canned
    1 onion
    1 red pepper
    1 tsp olive oil
    2 cloves garlic
    1 ounce mozzarella cheese, shredded
    TBSP dried basil


Precook spaghetti squash and separate into strands (boil or bake raw squash until side pushes in easily; slice open and discard seeds/pulp; shred with a fork, discarding rind).

In oil, fry onions, and peppers. Add squash and all other vegetables. Simmer till warm. Top with cheese and basil...simmer until melted.
