Number of Servings: 8


    3 cups flour
    1 1/2 cups brown sugar
    155g butter
    1 tsp cinnamon
    1tsp ground ginger
    2 tsp baking powder
    1/2 tsp baking soda
    2 eggs
    1 cup buttermilk
    pinch of salt


sift flour, baking powder, baking soda, cinnamon, ginger and salt in a bowl. add the sugar. rub in the butter until fine crumbs. beat the egg and buttermilk together then add the the flour mixture. mix together until it combines. it should be a 'sticky' mixture, not runny. spoon dollops into a greased muffin tray and bake at 180'c for 15-20min.
