    1 large Tortilla from LaTortilla Factory

    1 Grilled Chicken Breast (Cooked)

    1/8 cup Hunt's No Salt Added Tomato Sauce

    1/3 Cup Fat Free Mozzarella Cheese

    1/2 Cup Lettuce - Dole

    1 tsp Enchilada Seasoning Mix

    1/4 Cup Chopped Onions


Preheat oven to 350 degrees

In a saucepan, mix enchilada seasoning mix, 3 tbsp water, and tomato sauce

Once it begins to boil, stir in almost all of the cheese (leaving a bit to sprinkle on the top before it goes into the oven), and turn the stove on low

Take a small bit of that mixture and spoon it on top of the tortilla covering it all

Add cooked chicken and onions to mixture

Pour mixture in center of the tortilla, sprinkle lettuce along w/ the mix, wrap it up, and place on baking sheet w/ folds faced down

Sprinkle remaining cheese on top of enchilada

Bake for 10 minutes
