Ingredients

    1 tsp olive oil
    1 onion, chopped
    3 cloves garlic, minced
    3/4 cup uncooked quinoa
    1.5 c vegetable broth
    1 tsp ground cumin
    1/2 tsp cayenne pepper
    salt and pepper to taste
    1 15 oz can corn kernels
    1 15 oz can black beans, rinsed and drained
    1/2 c chopped fresh cilantro
    1 tsp lime juice

Directions

Heat oil in medium saucepan over medium heat. Saute onion and garlic until lightly browned.
Mix quinoa into saucepan and cover with broth. Season with cumin, cayenne pepper, salt and pepper. Bring mixture to a boil. Cover, reduce heat, and simmer 20 minute
Stir corn and beans into saucepan and continue to simmer about 5 minutes until heated through. Add cilantro and lime juice
Serving suggestions: top with sour cream and serve as main dish or side. Or fill mixutre inside a pita.
