Ingredients

    4 rashers bacon, all visible fat removed
    3 medium eggs
    black pepper
    3 tbsp very low fat natural fromage frais
    2 level tbsp grated parmesan cheese
    small bunch of chives
    400g boiled wholewheat spaghetti

Directions

(Cook pasta)
Roughly chop bacon and dry fry in non stick pan for 2-3 mins and set aside
Lightly beat the eggs, season and stir in fromage frais and 1 tbsp of Parmesan
Chop the chives and add to the mixture, reservinf some for garnish
Add the pasta and egg mix to the bacon in the pan and stir gently until egg starts to set
Serve sprinkled with remaining parmesan and chives.
