    2 Large eggplants
    1 Cup Ricotta Cheese, Part Skim
    1 Large Summer Squash
    1 Jar Tomato Sauce
    1 8oz Bag of Shredded Mozzarella
    Salt, Pepper, Garlic, Basil to Taste


Spray a 9x13 Pan with cooking spray.

Cut the Squash and Eggplant in thin disks. In a bowl add Ricotta Cheese, salt, pepper, garlic, basil mix well.

Put a small layer of sauce, than layer the eggplant, half the ricotta cheese, squash, 1/3 the mozzarella cheese, than repeat.

Cook for about 45-60min at 350
