Number of Servings: 10


    1.5 pounds beef tenderloin or boneless top loin steak, about .50" thick
    2 tablespoons margarine or butter
    1.5 cups beef broth
    2 tablespoons ketchup
    1 teaspoon of salt
    1 small clove of garlic, finely chopped
    8 ounces of mushrooms
    1 medium onion, shopped (about .50 cup)
    3 tablespoons all-purpose flour
    1 cup of sour cream/yogurt


Cut beef tenderloin across the grain into strips/chunks, each about 1.5"x.50", (Cut it while still half frozen to make it easier). Cook beef & margarine in a 10" skillet over low heat, stirring occasionally, until the meat is brown. Keep 1/3 cup of the broth off to the side. Stir the remainder of the broth, the ketchup, sald & garlic into the skillet. Heat to boiling then reduce heat, cover & simmer for about 10 minutes or until the meat is tender.
Stir in mushroom and onion. Cover & simmer for about 5 minutes or until the onion is tender. Shake the broth that you kept out and flour in a tightly covered container then gradually stir the mixture in with the beef. Heat to boil & stirring constantly. Boil & stir for 1 minute then reduce heat. Stir in sour cream/yogurt & heat until hot. Then serve over cooked noodles/rice if desired.

Serving Size: makes 6 1 cup servings (we usually get 10)
