Ingredients

    3 cups baby carrots
    1 large onion, chopped
    1 cup chopped celery
    3 boneless, skinless chicken breasts
    1/2 cup chicken broth
    2 tsp salt
    1/2 tsp black pepper
    2 tbls fresh basil, chopped (1 tsp dried basil)

Directions

1. Place carrots, onion, and celery in bottom of slow cooker.
2. Add chicken
3. Pour broth over chicken.
4. Sprinkle with salt , pepper, and basil
5. Cover. Cook on low 7-10 hours, or until chicken and vegetables are tender.

Serving Size: 1/2 chicken breast
