Delicious alternative to real pizza with all the flavor and none of the guilt! Delicious alternative to real pizza with all the flavor and none of the guilt!
Number of Servings: 4


    1 eggplant
    1 large tomato
    1/2 red onion
    4 mushrooms
    1 tbsp crushed garlic
    4 tbsp marinara sauce
    1/2 cup low fat ricotta cheese
    4 slices part skim mozzerella cheese
    4 tbsp parmesan cheese
    1 tbsp olive oil
    Salt, Pepper, Oregano


Preheat oven to 350 degrees
Coat baking pan with olive oil
Slice eggplant into thin, flat slices and layer bottom of pan as evenly as possible.
Spread marinara sauce and garlic evenly across eggplant
Spread ricotta cheese evenly over dish
Slice tomatoes, onions and mushrooms into thin slices and distribute evenly over dish
Sprinkle salt and pepper to taste
Top with slices of mozerella cheese
Bake for 30 minutes or until eggplant is soft and cheese is crispy
Sprinkle parmesan and oregano over top and serve!
