    1 Eggplant
    1/4 tsp salt
    1 tsp Olive oil
    1/3 cup tomato sauce (no salt added)
    1 oz mozzarella cheese (or 1 string cheese)
    2 TBSP Parmesan cheese


Pre-heat oven to 350°F.
Clean, peel, and cut eggplant into 1/2 inch slices.
Rub salt over each slice; lay out on tray for 20 minutes, then wash off salt and blot each slice dry.
Rub olive oil over each slice of eggplant; eggplant does not need to be completely covered with oil.
Cover bottom of baking dish with half of tomato sauce; layer eggplant slices with mozzarella and Parmesan cheese; repeat.
Top layers with leftover sauce and bake for 20 minutes or until heated through and bubbling.
