    8 Large Peaches (halved and pitted)
    1/8 Cup Brown Sugar
    1 Tbsp Cinnamon
    1-1/4 Cups Ricotta Cheese (part skim)
    1 Cup of Shredded Coconut
    2 Tbsp of lemon juice
    1 Tbsp Lemon Zest
    1 Tbsp Cinnamon
    1 Tsp Nutmeg


On a foil lined cookie sheet place peaches halved side up. In small bowl mix brown sugar and 1 Tbsp Cinnamon. Sprinkle over peaches. Bake in 425 degree oven for 25-30 Mins. In meantime, mix remaining ingredients in small bowl and refrigerate.

To serve place peaches in a bowl and top with ricotta mixture.

Can substitute any stone fruit! Enjoy
