    1.5 C WW Flour
    3 T protien powder
    1 tsp baking powder
    1 tsp baking soda
    1.25 c nonfat milk soured with 1 T lemon juice
    .5 c natural unsweetened applesauce
    .5 c oatmeal
    2 tsp vanilla
    2/3 c cranberries
    1/3 c pecans, chopped


Heat oven to 325. In large bowl, mix flour, protien powder, baking soda, baking powder, cinnamon and nutmeg. Mix well. In separate bowl, mix milk, applesauce, vanilla and milk soured with lemon juice. Mix well. Add to dry mixture. Mix well. Add oatmeal and mix well again! Fold in pecans and cranberries. Pour into 8x4 loaf pan sprayed with cooking spray. Bake for 50 minutes. Makes 12 deliciously clean slices.

  • I tried this bread yesterday. It came out looking very nice and texture was great, but it didn't have a lot of flavor. I decided to use the bread this morning for making french toast. It came out awesome drizzled with a little maple syrup. Will definitely make again! - 6/10/12
