Ingredients

    .5 C Whole wheat flour
    1 C all propose white flour
    1.5 tsp Baking powder
    .5 tsp baking soda
    3T sugar
    .5 tsp salt
    1.5 C lowfat buttermilk
    1 whole egg
    1 egg white
    1.5 T butter melted
    1T vanilla Extract

Directions

combine all dry ingredients and whisk together.
in another bowl (i use an extra large measuring cup) combine buttermilk and egg whites whisk to combine well.
combine cooled butter and egg yoke and mix well.

add buttermilk and egg white mixture to dry ingredients. mix well. add butter and egg yoke and mix well.

heat a griddle with vegetable oil or cooking spray. griddle should be hot. poor batter to make medium size pancakes. turn pancake once they begin to bubble. cook a minute or 2 more or until the bottom is golden brown. serve hot.
