Introduction

Ingredients

    PAM cooking spray
    2 (8 1/2-ounce) boxes Jiffy corn muffin mix
    1/2 tsp chili powder (to make spicy, use up to 1 Tbsp)
    2/3 cup fat free half and half
    1/2 cup egg substitute OR 3 jumbo egg whites
    1/4 cup drained oil-packed sun-dried tomatoes, chopped
    1/2 tsp salt
    pepper to taste


Directions

Preheat the oven to 350 degrees F.
Spray an 8-inch square baking pan with cooking spray and set aside.
Whisk the muffin mix and chili powder in a large bowl to blend.
Mix in the half and half and eggs.
Stir in the tomatoes, salt and pepper.
Spread the batter in the prepared pan.
Bake until the corn bread is firm to the touch and golden brown, about 38-40 minutes.
Cool slightly. Cut into squares and serve hot with butter.
