Introduction

Inspired by Spanikopita, one of my favorite Greek dishes which packs way too many calories to enjoy regularly. Inspired by Spanikopita, one of my favorite Greek dishes which packs way too many calories to enjoy regularly.
Number of Servings: 1

Ingredients

    3 large egg whites
    1 sprig of dill
    1 cup fresh spinach (or more to your liking)
    1/4 cup crumbled feta

Directions

Spray non-stick skillet with cooking spray.
Saute Spinach until wilted. Add in dill.
Pour in egg whites. Pull cooked portion from sides to center to allow uncooked whites to move to edges.
When mostly set, sprinkle on cheese and cover for a minute to melt a bit.
Fold omelet over and serve.
