    2 (3-4 ounces ea) fresh yellowfin and ahi tuna fillets
    5 cups chopped romaine lettuce
    1 3/4 cups grape tomatos
    1/3 cup whole pitted black or kalamata olives
    1/4 cup chopped roasted red pepper

    2 tbs olive oil
    2 tbs lemon juice
    1 tbs grainy Dijon mustard
    1/4 tsp dried thyme
    1 clove garlic, crushed


Sear tuna in a nonstick skillet heated over medium-high heat (no more than 1 minute per side). Season each side with a pinch of salt and pepper as it cooks. remove tuna from skillet and set aside.

In a large bowl, stir together lettuce, olives, and pepper.

In a small bowl, stir together dressing ingredients until well blended.

Cut tuna into 1/2" thick slices. Divide salad mixture between two plates, and top with tuna and dressing.

Serves 2
