    2 cups orange juice
    2 tbsp grated orange rind
    2 tbsp chopped fresh sage
    2 tbsp red wine vinegar
    3 cloves garlic, minced
    1 tsp ground black pepper
    1 pound flank steak


serves 4
In a large bowl, mix the orange juice, orange rind, sage, vinegar, garlic, mustard and pepper. Add the steak and turn to coat. Refriderate for 15 minutes or up to 25 hours, turning occassionally.
Remove the steak from the marinade and broil about 5" from the heat for 5 minutes per side, or until meat is light pink when tested with a knife for medium rare. Baste twice with the marinade while broiling, discard remaining marinade.

To serve thinly slice across the grain and on an angle.
