This is just a simple squash recipe that is very delish! This is just a simple squash recipe that is very delish!
Number of Servings: 4


    4 medium sized squash
    1 TBSP butter (I Can't Believe It's Not Butter used in calculations)
    1/4 cup milk (skim used in calculations)
    1 tsp onion powder
    Salt and pepper to taste


Wash and cut your squash into 1/2 inch slices.

Place in pot of water and bring to a boil. Boil for 8 minutes.

Drain water and mash the squash until it is not super mushy, but has some chunks too.

Add onion powder, butter, milk and salt and pepper.

Put back on burner and simmer for about 5 more minutes or so.

Serving Size: Makes approx. (4-6) 1/2 cup servings... depending on the size of your squash.
