    1 cup flour
    1 cup whole wheat flour
    1 tsp baking powder
    1/2 tsp baking soda
    1/4 tsp salt
    1/2 cup creamy peanut butter
    1/2 cuup sugar
    1/2 cup packed brown sugar
    1 large egg
    2 large egg whites
    2 tsp vanilla
    1/2 cup chopped dry or honey roasted peanuts


Preheat oven to 350. In a medium bowl, combine flours, baking powder, baking soda and salt; set aside. In a large bowl, beat peanut butter, sugars, egg, egg whites and vanilla until smooth. Add the flour mixture and peanuts to the peanut butter mixture and stir by hand just until combined.

Turn the dough out on a lightly floured surface, divide in half, and shape each piece into an 8 inch long log. Place the logs 2 to 3 inches apart on cookie sheet that has been sprayed with nonstick spray and flatten each into a rectangle that is about 3 inches wide. Bake for 25 to 30 minutes, until firm and starting to crack on top. Place on wire rack to cool for 15 minutes. Reduce oven temperature to 275.

Place logs on cutting board, trim the ends and cut each diagonally into 1/2 inch to 3/4 inch thick slices with a sharp serrated knife. Place biscotti cut side down on the cookie sheet. Return them to the oven for 20 minutes, then flip them over and bake for another 20 minutes. Transfer to a wire rack to cool. store in an airtigh container for up to 2 weeks.

Makes 2 dozen biscotti.

  • We enjoyed this biscotti. I substituted Splenda for the sugar. I think next time I'll add a little more to sweeten it a bit. I cut my pieces about 1/2", so it made about 36 pieces. Next time, I'll make just half a recipe. - 8/4/13
