    Feta Cheese, 4 oz
    Eggplant, fresh, 1 eggplant, peeled (yield from 1-1/4
    Onions, raw, 1 small
    Olive Oil, 4 tbsp
    Oregano, ground, 1 tbsp
    Garlic, 3 clove


Peel and cude eggplant, mince garlic, dice onion, add garlic and oregano and toss in olive oil. Cook at 359 degrees for 35-45 minutes until eggplant is browned and the desired tenderness.
