    3 carrots
    3 beets
    1/2 c. feta, crumbled
    2 Tbs. olive oil
    1 Tb. vinegar
    a dash of pepper


1. Peel both the carrots and the beets.
2. Cut the ends off the carrots and beets and throw them out.
3. Slice the carrots and beets into long thin slices. (Julienne cut)
4. Mix the slices together in a bowl.
5. Sprinkle with oil, vinegar, and pepper.
6. Toss the ingredients, and serve.
