Peanut Butter Oatmeal Chocolate Chip Cookies

3/8 cup whole wheat flour
3/8 cup white flour
1/4 tsp baking powder
1/2 cup oats (old fashioned or quick)
1/2 cup light brown sugar
1/4 cup butter, softened
1/4 cup Smart Balance Natural Peanut Butter
1/8 cup Pure Raw Honey
1 large Eggland's Best Egg
1 tsp vanilla extract
1/2 cup chocolate chips (optional; may use raisins instead)
1/2 cup skim milk.
In a medium bowl, mix flours, baking powder, and oats. Mix well with a wire whisk.
In a large bowl, brown sugar and butter with an electric mixer at medium speed to form a grainy paste.
Blend the paste together with peanut butter, honey, egg, and vanilla.
Add flour mixture and chocolate chips. Mix well.
Add milk. Mix well.
Drop onto cookie sheet by the tablespoon, about 2 inches apart.
Cook for 23-25 minutes at 300, or until the bottoms are golden brown.
When finished cooking, transfer to a cool surface.
You may sprinkle cookies with Splenda if you like.
Makes 24 cookies (1 cookie per serving)
