Ingredients

    Zatarain's Original Jambalaya, 2-8 oz boxes
    Eckrich Skinless Smoked Sausage, 16 oz package
    Perdue Fit&Easy Chicken Breast Tenderloin, 16 oz package
    Shrimp, medium-uncooked, peeled, and deveined, 16 oz
    Creole Seasoning, Tony Chachere's, 3 tsp
    Extra Virgin Olive Oil, 2 tbsp
    Land O Lakes, Garlic Butter, 6 Tbsp
    Fresh Roma Tomato (Medium), 2, chunked
    Garlic, fresh, raw, 3 cloves, chopped
    Yellow Bell Pepper - 1 large, chopped
    Spanish Onion, 1 medium, chopped
    Bell Pepper, Green, 1 large, chopped
    Bell Pepper, Red - 1 large, chopped
    Celery, raw, medium, 4 stalks, chopped

Directions

Need 1 large stock pot, bamboo skewers, 8 x 12" aluminum foil double boiler pan (fill bottom pan with 1/2" water, inset 2nd pan).

Preheat grill and place double boiler on grill to heat the water.

Soak the bamboo skewers in water for at least 30 minutes.

Place chicken and shrimp each in their own bowl. Drizzle each with a tbsp of olive oil and sprinkle with a tsp of creole seasoning, and mix and cover.

Prepare the ZATARAIN'SŪ Jambalaya Mix as directed, in the stock pot.

Prepare all the vegetables.

Skewer the shrimp through each piece twice(so you don't lose any on the grill)

Cut the sausage into manageable-size pieces.

Mix all the vegetables and butter pats into the double boiler, along with a dash of
creole seasoning. Cover loosely with foil.

Grill the chicken, sausage, and shrimp. The shrimp will cook fastest and usually only need to be cooked 2-4 min per side, on a hot grill.

Stir the vegetable mix occasionally, and add the meat as it finishes cooking. Cut the chicken and sausage into bite-sized pieces before adding to mix.

Total cooking time on the grill should be 20-25 mins.

Mix the contents of the double boiler to the rice and serve immediately.
