    i prefer italian or garlic and herb bread crumbs. any jarred or canned tomatoe sauce is fine.


Preheat oven to 350 degrees. cut 1 large eggplant in 1/2" slices across, place on a sheet sprinkle kosher salt generously on both sides; let sit for 30 min. Rinse slice off. Mix 2 eggs in a bowl and bread crumbs on a dish. Dry off eggplant dip in eggs then toss gently in bread crumbs replace on cookie sheet. bake for 15-25 min remove. Line the bottom of 13 by 9" pan with tomatoe sauce. place eggplant cover in sauce. Peel reduce fat string cheese or any mozerella and sprinkle or lay on top, bake for another 15-25 min
