Ingredients
-
Two pounds ground beef
One Medium Onion, chopped
Two cloves Garlic, minced
15 oz.Part-Skim Riccota Cheese
8 oz. Cottage Cheese
Two 10 oz. jars Ragu Old World Style Pasta Sauce with Mushrooms
1/4 teaspoon basil leaves
1/4 teaspoon oregano
20 oz. Lasagna Noodles (One 16 oz. box plus part of another box.)
8 oz. Mozzarella Cheese
8 oz.Kraft Free Fat Free Mozzarella Cheese
1 cup water
Directions
Makes two 3 quart casseroles or thirty servings.
In a large skillet, cook the ground beef. Drain off any fat, and add onion and garlic. Cover and cook another five minutes.
Add the contents of the cottage cheese and ricotta cheese containers to the hamburger and thouroughly mix together. Add the Ragu sauce to the meat and cheese mixture, being careful not to overfill the skillet with sauce. Any leftover sauce can be added directly to the meat and cheese mixture when layering into the casserole dish.
Mix in the Oregano leaves and Basil.
In two large rectangular 3-quart casseroles, pour 1/2 cup of water into bottom of each casserole dish. Line the bottom of the dish with uncooked lasagna noodles. Then layer with the skillet mixture. Place a total of three layers of noodles and three layers of the skillet contents into each casserole dish. Top with the mozzarella cheeses.
Bake, covered with aluminum foil at 350 degrees for 55 minutes. Uncover and cook another five minutes until cheese melts. Or, if you choose, cover and freeze for later use.
Note: For even fewer calories and fat, the ground beef may be reduced to one pound and fat free ricotta and cottage cheeses substituted for the low fat ones.
