Mushroom soup without all that cream. Mushroom soup without all that cream.
Number of Servings: 3


    6 C sliced mushrooms
    4 C chicken broth [bouillon is made with 4 C water and 5 cubes bouillon]
    1 medium yellow onion
    2 heads of baby bok choy
    3 T arrowroot flour
    3 T Olive oil
    1 T butter
    2-3 cloves garlic, chopped
    1 t Dill Weed, dried or 1 T fresh
    3/4 t pepper
    1/2 t Fennel Seed, crushed
    1/2 t paprika


Add butter and olive oil to pan; let butter melt. Add onions and chopped garlic to pan. Slice bok choy and add hard parts to pot and save leaves for later. Cook until softened; 5 mins. Add mushrooms, cook until wilted. Add arrowroot flour and spices. Reduce heat to low and stir constantly, scraping bottom of pan for 5 mins. Add stock [can be vegetable] and pepper. Bring to a boil, reduce heat and simmer for 20 mins.
