    1 box Penne Pasta
    1/2 of a Large Onion, chopped
    5 links Chorizo, no casing and roughly chopped
    2 cans Diced Tomatoes
    2 cloves Garlic, sliced
    2 tbsp Parsley, Dried
    1.25 cup Mushrooms, sliced


1) Cook pasta according to box directions.

2) De-case chorizo and place in hot pan, stir to break apart while it cooks. After about 2 minutes, add onion and garlic, cook until translucent.

3) After onions are translucent, add mushrooms and cook about 1 minute, then add diced tomatoes and parsley. Heat through.

4) Drain pasta and combine with sauce.

Serving Size: Makes 7 servings of 11.6oz each.
