Ingredients

    3 Navel Oranges (medium)
    2 Banana, fresh/frozen small (6" to 6-7/8" long)
    2/3 cup Applesauce, unsweetened
    64 grams (1 2 1/4 oz jar) Arrowroot flour
    453 grams Granulated Sugar
    453 grams (1 bag) Bob's Red Mill Almond Meal/Flour

Here is how I made it. While oranges were boiling, I pureed together (use a food processor if you have it, blender works fine if you don't) Banana's, applesauce, arrowroot powder, and the sugar.

Cooled the oranges, quartered them and checked for seeds, find any remove them. Put the whole (rind and all) quarters into the blender in stages with the fruit & sugar puree until all of the orange was pureed smooth.

Folded in the almond meal/flour. Poured into a parchment paper lined spring cake pan (like used for cheese cakes). Baked for 30 minutes at 375 and for the last 30 at 350. Allow to cool completely, frost lightly with powdered sugar.

Serving Size: I got 12 slices from this cake.
