Introduction

A good protein filled, high fiber meal! A good protein filled, high fiber meal!

Ingredients

    1.25 cup Tomatoes, red, ripe, canned, with green chilies (10 oz)
    454 Beans, black (16 oz)
    454 Beans, pinto (15 oz)
    32 oz 93% Lean Ground Beef
    2 packages of taco seasoning mix
    1 package Ranch dressing mix

Directions

Brown 2 lbs. ground meat and stir in 2 packages of taco seasoning, one package of Ranch dressing mix and 10 oz Rotel.

Stir in one 16 oz can drained pinto beans & one 15 oz can drained & rinsed black beans. Heat thoroughly or put in crockpot to warm over several hours. If you plan to keep it warm for several hours, then reserve some of the pinto bean juice in case recipe begins to dry out. You can add a can of drained corn to this, but my family doesn't care for it that way. Serve alone with tortilla chips, cheese, sour cream or over shredded lettuce.

  • I have a question & this sounds really good! I'm gonna save it, but Dirob, is it to be eaten like soup or over rice, or how? Just curious. I may make this next week. - 4/16/09

    I'm sorry it took so long to answer this....I didn't see it until I opened the recipe this morning! We usually eat it over lettuce with chips...like a taco salad. It certainly can be eaten over rice or as a soup. If you prefer a soupier mixture, you probably shouldn't drain anything. :)
