    *Bread flour (king arthur white) 1/4 c, 8 serving
    Granulated Sugar, .25 cup
    Baking Powder, 3 tsp
    Salt, .50 tsp
    *Skim Milk, .50 cup
    Egg, fresh, 1 large
    *Extra Virgin Olive Oil, 5 tbsp
    Banana, fresh, .75 cup, mashed
    Walnuts, .50 cup, chopped


Preheat oven at 400 degrees. Combine flour, sugar, baking powder and salt in a medium bowl. Create a well in center. Mix milk, egg, oil, banana and walnut in small bowl. Pour mixture into well. Mix batter just until moistened; do not over mix. Spoon batter into prepared muffin cups. Bake until a toothpick in center comes clean, approximately 15 minutes. Bake in muffin tins, loaf pan or 8 x 8 baking dish.
