Ingredients

1 egg
1/2 c. packed brown sugar
1/3 c cooking oil
1/2 tsp. vanilla
3/4 c. unsifted all purpose flour
1 tsp. ground cinnamon
1/4 tsp. salt
1/8 tsp. baking powder
2/3 c. shredded zucchini
Directions
Beat egg; blend in brown sugar, oil and vanilla until smooth. Add remaining ingredients; stir until moistened. Spoon batter into paper-lined microwave muffin cups filling cups two-thirds full.
Microwave (high) 6 muffins at a time, uncovered, 2-2 1/2 minutes or until no longer looking doughty on top. Rotate once if you don't have a rotating plate in your overn. Repeat with remaining batter, microwaving 3 muffins 1 1/2-2 minutes.
Carrots, walnuts, almonds or raisins could be added but remember to add the calories /nutritional info when finished.
