    6 medium blue potatoes (may use red or white instead)
    1-2 tsp. salt
    1/2 C. chooped green onion
    1/2 C. chopped fresh Cilantro
    1 small red bell pepper

    1/4 C. Rice wine vinegar
    1 tsp. Sesami Oil
    2 Tbs Olive Oil
    12 Tsp Soy Sauce
    1/8-1/4 tsp. cayenne pepper


Bring a large pot half full of water to a rolling boil and add salt. Meanwhile dice potatoes. Add to boiling water and cook for 7-10 min. after water comes to boil again and they are jus tender. Drain and let cool while making the dressing. In a large bowl, place potatoes and add the green onions, cilantro and peppers. Mix dressing ingrediants and fold lightly into potato mixture. serve right away while still slightly warm, or salad is tasty when let sit in the frig for an hour or 2 or overnight!
