    1/2 c frozen spinach, thawed & drained
    5 eggs
    1/2 cup skim milk
    1/2 cup low-fat mozzarella
    black pepper, salt, garlic, red pepper flakes to taste


Drain spinach well
Mix eggs and milk
Add spinach & cheese to egg mixture
Spice to taste
Bake @ 350 until center is firm and set
