    0.5 c. Quinoa, dry
    1 c. chicken broth
    2 c. chopped cucumber
    1 cup cherry tomatoes, cut in half
    0.5 red onion, chopped
    2 c. fresh spinach, chopped
    2 cloves of garlic, chopped
    1 tbsp olive oil
    3 tbsp balsamic vinegar
    4 oz. can of small shrimp, drained
    4 oz can of black olives, chopped
    2 oz reduced fat feta cheese


1. Cook quinoa in chicken broth
2. Combine quinoa with the rest of the ingredients in a large bowl. Mix well.
3. Chill to set flavors
