Ingredients

1 medium onion, chopped
1 clove garlic, finely chopped
0.5 tbsp olive oil
1 cup tomatoes, diced
1 cup egg white
1 (10 oz.) package frozen spinach, thawed and squeezed dry (very dry!)
¼ tsp black pepper
½ tsp salt
½ cup fat-free cheddar cheese, grated
1 tsp Mrs.dash Garlic and Herb Seasoning or Italian seasoning
1 tsp basil
Directions
Saute onion, tomatoes and garlic in oil until tender in medium size saute' pan with high sides
Add Mrs.Dash, black pepper and salt to the eggs and add to vegetable mixture.
Stir in spinach and cheese.
Cover with a tight fitting lid and reduce heat to low.
Cook for 15 minutes and check for firmness.
Cut into wedges with spatula and serve warm.
