Introduction

A tasty fat free, crunchy salad. For color, use red cabbage or mix red and green cabbage.

You can easily add additional vegetables (carrots, bell pepper) to make it even more colorful.

Ingredients

    cabbage, red fresh, 100 grams
    ginger root, fresh 5 grams
    onions, green 7 grams (~1/2 green onion)
    soy sauce (low sodium), 1 tbsp
    mirin (rice wine vinegar), 1 1/2 tsp

Directions

Chop or shred the cabbage.
Mince the fresh ginger and onion.
Combine all ingredients (cabbage, onion, ginger, soy sauce, vinegar), and toss in a bowl.
Refrigerate for at least an hour for the flavors to blend. Even better the next day!
