Introduction

I have doubled this recipe so that I can freeze half and use later. I have doubled this recipe so that I can freeze half and use later.
Number of Servings: 12

Ingredients

    1 cup of ground oatmeal
    1 cup ground flax seed (flax meal)
    1 teaspoon of baking soda
    1/8 teaspoon of salt
    7-8 tablespoons of granular splenda
    1/2 teaspoon of pumpkin pie spice
    8 eggs
    2 cups nonfat cottage cheese
    2/3 cup of milk
    2 teaspoons of vanilla

Directions

combine all dry ingredients in bowl. (I grind my own oats). Combine all wet ingredients in blender. Mix dry ingredients with wet ingredients. Pour out into small pancakes on a griddle or in a pan. Flip when bubbly. Eat and enjoy. They have just enough sweetness and spice, so I just eat them plain. You can add applesauce or sugar free syrup for a high protein-low sugar treat.
