Ingredients

    6 very ripe bananas
    2 eggs
    3 C whole wheat flour
    2 C sugar
    2 tsp baking soda
    1 tsp salt
    1/2 C butter, melted
    NOTE: I melt the butter in the loaf pans so that they are coated.

Directions

Mash ripe bananas in large mixing bowl. Stir in rest of ingredients, mixing thoroughly. Pour batter into 2 buttered loaf pans. Bake at 325 degrees for one hour,

    1/2 the recipe, used brown sugar, and made 12 muffins instead of a loaf. Delicious! Fluffy, sweet, and easy on the portion side of things. - 9/14/11
