Ingredients

    1 (16oz.) package of shredded coleslaw mix
    5 oz. cashew pieces (roasted with sea salt, no added oils)
    1 (3 oz.) package ramen noodles plain
    1 bunch of green onions, chopped
    1/4 cup sugar
    1/2 cup vegetable oil
    1/4 cup cider vinegar
    1 tablespoon less sodium soy sauce

Directions

Toast the crushed noodles and cashew nuts until golden brown in a preheated 350 degree F oven.

In a large bowl, comine: coleslaw, green onions, toasted ramen noodles & cashew nuts.

To prepare the dressing, whisk together the sugar, oil, vinegar, and soy sauce.

Pour the dressing over the salad, toss and serve!
