Introduction
A creamy and spicy soup that reminds me of India...While the cooking time is long, it required almost no attention while cooking. While the cooking time is long, it required almost no attention while cooking. I used the vegetables that I had on hand (and that my boyfriend likes), but I am sure that it would be delicious with any vegetable.

Ingredients

1 small onion
3 cloves garlic
2 tsp curry powder
.25 tsp tumeric powder
1 bay leaf
2 cloves
1 cardamon pod
salt and pepper to taste
6 cups water
1.5 cups split yellow peas (aka yellow dal)
3 carrots
.5 package frozen spinach
Directions
1. Dice onion and mince onion.
2. Sauté in soup pot for 1 minute (I use a little spray oil to keep from sticking).
3. Add spices and continue cooking until onions are soft. You may need to add a tablespoon of water while cooking to keep from sticking or burning.
4. Once onions are soft, add water and peas.
5. Bring to boil, boil 1 minute, then reduce to simmer.
6. Cover and simmer. Stir occasionally (every 15 minutes) until peas are beginning to soften (about 1 hour). You may need to add more
7. Add chopped carrots and continue to simmer (covered) for 20 minutes.
8. Add frozen spinach and cook until spinach is hot (about 10 minutes).
