    4 boneless, skinless chicken breasts
    1/4 cup dijon mustard
    8 ounces light sour cream
    1.5 cups breadcrumbs
    1/2 cup freshly grated Parmesan or pecorino Romano
    Salt to taste
    Pepper to taste


1. Preheat oven to 375
2. Spray a glass baking dish with Pam
3. Mix mustard and sour cream in one bowl
4. Mix bread crumbs, cheese, salt and pepper in another bowl
5. Dunk a chicken breast in the mustard mix and coat it well
6. Dunk coated chicken breast into the bread crumbs mix and coat it well
7. Place in the baking dish, and repeat steps 5-7 with the rest of the chicken breasts
8. Bake at 375 fro 45 minutes
