    8 ozs (2 cans) white crabmeat, drained
    0.5 cup onion, chopped
    0.5 cup zucchini, chopped
    0.5 cup summer squash, chopped
    0.5 cup mushrooms, chopped
    1 small tomato, seeded and chopped
    3 large eggs
    2 cups 1% milk
    4 ozs swiss cheese, grated
    1 TBSP grated parmesan
    salt, pepper, cayenne pepper, dry mustard to taste


Preheat oven to 350 degrees. Lightly spray 9 in. pie plate with non-stick spray. Saute all vegetables until soft in large sauté pan lightly sprayed with olive oil spray. Remove from heat and add drained crabmeat. Season to taste. A sprinkle of each spice should suffice. Spread out in prepared pie plate. In a separate bowl, beat the eggs, add milk. Gently pour over the vegetables and crabmeat mixture. Sprinkle with both cheeses.
Bake at 350 degrees until lightly browned, approx. 30-35 mins.
Let it sit 10 mins. before serving.
