A beautiful soup that is delicious and full of Vitamin A and easy--you can use spinach from a bag. A beautiful soup that is delicious and full of Vitamin A and easy--you can use spinach from a bag.
Number of Servings: 10

Ingredients

    1-1/2 tsp margarine, soft
    1-1/2 tbsp olive oil
    1 large onion, chopped
    10 oz baby spinach, fresh
    3 cups low fat vanilla soy milk
    3 tbsp flour
    3 cups chicken broth (or vegetable broth)
    1 tbsp basil
    2 tbsp soy sauce
    salt and pepper to taste

Directions

Melt margarine with olive oil in soup pot.
Chop onion and add to margarine and olive oil.
Cook until onion is soft.
Add baby spinach and cook for a few minutes.
Add flour to thicken and make roux.
Add soy milk and broth.
Chop basil and add.
Add soy sauce.
Puree in blender or with handmixer.
Bring to boil until heated throughout.
Add salt and pepper to taste.
Makes about 8 servings as a side dish or 6 as a main dish.
Can use regular milk as well.
