    3 chicken breasts, cut into small pieces
    1 medium onion, chopped
    4 garlic cloves, chopped
    2 tbsp. vegetable oil
    2 tbsp rice wine vinegar
    6 tbsp hoi-sin sauce
    2 tbsp soy sauce
    1/2 tsp salt
    1/2 tsp hot red chili flakes
    1 1/4 cup basmati rice


Cook rice in medium pot with 2 1/4 cups water. Simmer until cooked (about 20 minutes).

Heat a wok until hot. Add the oil and swirl it around. Add the onion and stir fry for 2 minutes. Add chicken and chopped garlic. Stir until chicken is cooked.

Add rice wine vinegar, hoi-sin sauce, soy sauce, salt and crushed red pepper. Stir around until evenly coated.

Serve over rice.

You can lower the carbs by eliminating the rice.
