    1 pound ground turkey breast
    1/4 onion, chopped
    1 cup water
    1 envelope reduced sodium taco seasoning
    1 15 oz can black beans, rinsed & drained
    1 15 oz can diced tomatoes with green chilies
    6 8 in whole wheat tortillas
    1 16 oz can fat free refried beans
    2 cups reduced fat Mexican 4 cheese blend


Cook the turkey in a large skillet with onion until meat is no longer pink. Add water & taco seasoning, bring to a boil. Reduce heat, simmer uncovered 2 minutes. Stir in black beans & tomatoes. Simmer uncovered 10 additional minutes.
Place 2 tortillas in a greased 9x13 baking dish. Spread half of the refried beans over each tortilla, then half the turkey mixture over that. Sprinkle with 1/2 cup cheese. Repeat layers. Top with remaining tortillas & cheese. Cover & bake at 350 for 25-30 minutes or until heated through and cheese is melted. Cut each tortilla stack into 4 pieces.
