Ingredients

8 oz extra lean ground beef
3 la tortilla factory whole wheat tortillas, small
1/2 cup red peppers, diced
2/3 cup corn kernels (roasted is preferred)
2-3 tsp low sodium taco seasoning + 1/4 cup water
1 tsp cumin
1/2 cup pace chunky salsa
10 oz can of old el paso enchilada sauce
1/2 cup colby jack shredded cheese
Directions
preheat oven to 375
brown beef in a skillet and set aside.
spray a second skillet with oil and saute peppers and corn on medium-high heat.
add 1/2 cup of salsa, taco seasoning, water, cumin and ground beef and mix to combine. Simmer for 5 minutes.
Layer one tortilla on the bottom of a cake pan or small casserole dish.
Pour half of the meat mixture on top, 1/3 can of enchilada sauce, and 1/4 cup of cheese.
Layer with another tortilla, and repeat.
Lay a final tortilla on top, and pour final 1/3 of enchilada sauce on top.
Wrap with foil and bake for 20 minutes.
Remove from oven and let sit for at least 15 minutes.
Serving Size: makes 4 slices
