Introduction

This is a very simple, easy to cook tasty meal. Enjoy! This is a very simple, easy to cook tasty meal. Enjoy!
Number of Servings: 14

Ingredients

    2 1/2 lbs of Boneless, Skinless, Chicken Breast
    2 cups Fresh Salsa
    2 cups Jasmine Rice (alternate rice can be used)
    1 cup Water

Directions

1. Clean Chicken then place in Deep Dish pan
2. Pour 2 cups of salsa over chicken.
3. Cover pan with aluminum foil and bake in a preheated oven set at 375 degrees
4. Cook for 20 minutes
5. Remove from oven, add 2 cups of rice and one cup of water and stir into salsa-chicken broth.
6. Cover with aluminum foil and bake another 20 minutes.

Makes about 14, 3 oz servings of meat with 1/2 cup rice.

Optional: (Not included in calculations)
Top lightly with your choice of cheese
Add a dollop of fat free sour cream to an individual portion of rice
Add sliced olives when adding rice to recipe.
Add other ingredients you like to make it your own.
