    2 cups orzo, uncooked

    1 pound sausage, turkey

    2 pepper(s), bell, red, or yellow or green, large, seeded and chopped

    2 carrot(s), peeled and chopped

    1 can diced tomatoes, 14 ounces, unsalted

    1/2 onion(s), yellow or white, chopped

    2 zucchini(s), medium, chopped

    1/4 cup basil, fresh, chopped

    1/3 cup parmesan cheese, grated

    1 tablespoon garlic, bottled minced

    1/2 cup chicken broth, reduced sodium (or vegetable broth, reduced sodium)


Place 8 to 10 cups of water in a large pot and boil over high heat. Add the orzo and cook according to package directions, usually about 8 or 9 minutes. Meanwhile, heat a large skillet over medium high heat. Remove the sausage from the casings and brown it in the skillet, breaking it up with a wooden spoon or spatula. Lower the heat to medium and add the garlic, onion, carrot and pepper and stir. Cook for about 5 minutes until carrots and other vegetables are just tender. Add broth and canned tomatoes and cook for a couple of minutes. Drain the orzo and pour it into the skillet. Stir and cook for a minute or two until flavors are combined. Serve hot with chopped basil and parmesan as garnish.
