Introduction

Ingredients

    1 can diced tomatoes
    1 can water
    1 can 1% milk
    1/4 c flour

Directions

Empty can of tomatoes and can of water into medium saucepan. Heat on medium-high until the mixture reaches a rolling boil. Meanwhile, place flour in a small bowl. Gradually add and mix enough water to make a medium-thick roux, just thin enough to pour.

When tomato/water mixture has reached a boil, use a WOODEN or PLASTIC spoon (no metal!) to begin stirring in one direction only, so that mixture swirls around pan. IMPORTANT: do not use a metal spoon or allow the mixture to change directions, as it will cause the milk to curdle when added to the tomato mixture. While stirring, pour all the milk into the pan at once, and immediately follow it with the paste. Continue cooking and stirring at least 1 minute after adding milk and flour paste to avoid curdling.

Cover and stir occasionally until soup has reached desired thickness. Add salt, pepper, garlic and/or celery salt to taste.
