Introduction

Ingredients

3 1/4 c. Hunts Tomato Sauce
1 cup Mushrooms, canned, sliced
1/2 cup Pepper & Onion Blend - Frozen (I use Bird's Eye)
2 links Italian Turkey Sausage - I used Shady Brook used to calculate)
1/4 c. Red Wine - Dry
1 Tbsp. Olive Oil
Splenda, 2 packets
Salt, 1/2 tsp. or to taste
Black 1/4 tsp. or to taste
Emeril's Italian Essense, 1 Tbsp
Parmesan Cheese, grated, 2 Tbsp
Pepper, red or cayenne, 1/8 tsp or to taste
Directions
Fry turkey sausage, drain well.
Roughly chop frozen peppers and onions.
Mix All ingredients except Parmesan Cheese, Simmer for 30 minutes over med-low to let flavors marry.
Stir in parmesan chesse.
Adjust seasonings to taste.
Serve and enjoy
Makes 5 servings, 1 1/3 cup serving size.
Note for low carbers: YES! The noodles are purple. I use Tofu Shirataki (Yam Noodles), which are usually white. I boil mine in a 1/4 cup of dry red wine for a delicious twist. These are available at World Food Markets.
